Butternut Squash Pizza Botten / Crust

Pizzabotten gjord på butternut squash blev riktigt smakrikt och gott. Har ni testat det? Jag har experimenterat receptet fram och tillbaka några gånger och äntligen fick jag till det med rätt konsistens, krispighet och smak. Det är vid sådana här tillfällen det är roligt att vara matbloggare. När ens experiment blir lyckade och till och med en skeptiskt make tycker att det smakar gott. Hans pizza hade en liten annan topping (som ni kanske förstår) men nedan ser ni vad jag hade på min. Önskar er en fortsatt skön ledighet imorgon när nationaldagen hägrar.

Pizza crust made of butternut squash is so tasty. Have you tried it? I've been experimenting the recipe back and forth a couple of times to get the right consistency, chrunchiness and taste. It is at times like this it's fun to be a food blogger. When your experiment is successful and even a skeptical husband thinks it tastes really good. His pizza had a little different topping (as you might imagine), but below you can see what I had on mine. We have a long weekend here and tomorrow we're celebrating the National Day of Sweden.

Butternut squash pizzabotten (Två lagom stora bottnar)
500g ugnsrostad och mosad butternut squash (Köp en 550 eller 600 gram butternut för kärnor och skal kommer att tas bort)
2 msk krossade linfrön som blandas med 4 msk vatten, låt stå och dra i ca 10 minuter (eller använd 2 små ägg)
ca 1.5-2 dl finmalet majsmjöl (eller annat valfritt mjöl)
ca 2.5-3 dl glutenfritt mjöl (jag tog Urkrafts mjölmix med durra och teffmjöl)
1 tsk torkad oregano
0.5 tsk havssalt
en nypa eller två krossad svartpeppar

Sätt ugnen på 200 grader.

Skär itu butternuten på längden och skopa ur kärnorna. Lägg halvorna i en ugnsform och fyll på med vatten till hälften av butternuten. Rosta i ugnen i ca 1 timma, känn med en sticka så butternuten är genomstekt. Låt den kallna och skopa ut innehållet med en sked och lägg det i en större skål. Mosa det med en gaffel.

I en liten skål/glas blanda 2 msk krossade linfrön med 4 mska vatten och låt stå och dra i ca 10 minuter.

I den större mosade butternutskålen lägg i de blötlagda krossade linfröna, oregano, salt, svartpeppar och lite mjöl lite i taget. Mjöl är väderberoende så vissa dagar behövs det mer och andra lite mindre. Knåda ihop till en smidig deg som går att kavla ut på ett bakplåtspapper.

Dela degen i två bitar och lägg på bakplåtspapper. Kavla eller fingra ut den till två runda cirklar. Se till att kanterna är lite tjockare. Baka i ugnen 220 grader i ca 20 minuter tills kanterna är krispiga och gyllene och mitten kan lyftas från bakplåtspappret. Lägg på pizzasås (jag gjorde min tomatsås på tomater, vita bönor, majs, lök, vitlök, kryddor och örter) och valfri topping och baka i ytterligare 15-20 minuter. Vid serveringen låt stå i några minuter innan garnering av grönt sker. Smaklig måltid!

Butternut squash pizza crust (Two medium sized crusts)
500g oven roasted & mashed butternut squash (Buy a 550 or 600 gram fresh squash because of the seeds & peel that will be removed)
2 tbsp ground flax seeds + 4 tbsp water, let sit for 10 minutes
1 US cup fine corn meal (almond flour or other flour of choice works fine too)
1 to 1.5 US cup glutenfree flour of choice (I used sorghum & teff but garbanzo/chickpea flour works fine too)
1 tsp dried oregano
0.5 tsp sea salt
a pinch or two of cracked black pepper

Preheat the oven to 200C/400F.

Cut the squash in half lengthwise and scoop out the seeds. Lay the halves in a roasting pan and fill halfway with water. Cook in the oven for about 1 hour until a fork can easily pierce the flesh of the squash. Let cool, then scoop out the flesh in a bigger bowl and mash it with a fork.

In a small bowl combine the 2 tbsp of ground flax seeds with 4 tbsp water. Let sit for approx. 10 minutes.

In the mashed squash bowl combine the soaked flax, dried oregano, sea salt, cracked black pepper and flour little by little. Flour is weather sensitive so some days more will be needed and other day less. Stir to combine with a spoon or knead with your hand. The dough should be smooth and should be able to be rolled on a parchment paper.

Spread the mixture onto two parchment lined trays and create two circles, making sure that the edges are a little bit thicker. Bake in a 220C/425F for about 20 minutes until the edges are crisp and golden and the centre is set (and can peel away from the paper). Top with pizza sauce (recipe for my tomato sauce, look further down) and topping of your choice, and bake for another 15 to 20 minutes minutes. Let sit a few minutes before garnishing with greens. Enjoy lots!

Amy's easy tomato sauce (for two pizzas)
1 yellow onion, finely chopped
2 or 3 garlic cloves, finely chopped
0.5 tbsp olive oil
1 can of crushed tomatoes (I use 6 fresh tomatoes that I chopped)
a splash of balsamic vinegar
a splash of maple syrup (honey or agave works too)
sea salt och black pepper to taste
0.5 tsp dried herbs or fresh (I used fresh oregano & basil)

Fry the onion and garlic in olive oil over medium heat until golden. Add tomatoes, herbs, maple syrup (or honey/agave) and the balsamic vinegar. Make sure you get a balance between the sweetness in maple syrup and the acidity in the vinegar. Let the sauce simmer for 20 to 30 minutes. I had mine simmering for about 40 miutes. (This time I also addes some corn and white beans to the sauce to get it more filling.)

Glutenfritt bröd - Gluten Free Bread

Det är inte ofta jag bakar glutenfritt bröd hemma men när jag fick chansen kunde jag inte motstå den. Snälla Isabel skickade över hennes egna glutenfria mjölmix för att jag skulle få baka med det. Hon är fiffig Bella! Jag tror hon har sökt patent på mjölmixen och kommer att sälja den i framtiden och förhoppningsvis i en butik nära oss alla. Bella skrev till mig och sa: Amy, brödet går inte att skära när det är varmt. Vänta tills det blir kallt... ni vet ju hur jag är. Jag skar det när det var ugnsvarmt och det funkade alldeles perfekt! Hur som helst gott var det och vi bara njöt...

It's not that often I bake gluten free bread but when I got the chance I couldn't resist taking it. Lovely Isabel sent me her own gluten free flour for me to try out. She's a clever lady for sure! She has applied for a patent on the flour and it will be sold here in Sweden in the future... hopefully in the local stores close by. Bella wrote to me: Amy, don't cut the bread when it's still warm. It will not turn out good... you know me. I cut it when it was warm and it worked perfectly well! It had a lovely taste and we really enjoyed it...

Glutenfritt bröd (ca 12 frallor)
500g glutenfritt mjöl
7 dl vatten
25g jäst (1/2 paket)
3 msk olja
3 tsk salt
en liten morot, riven + 0,5 dl pumpakärnor
0,5 dl torkade aprikoser, klippta i bitar + 2 msk linfrön

Smula jäst i en bunke och tillsätt fingervarmt (37 grader) vatten och rör om tills jästen löst sig helt. Tillsätt därefter olja och salt. Häll över mjöl och låt köksassistenten göra sitt. Har du ingen så får du röra kraftigt tills allt har blandats ordentligt. Inga klumpar får förekomma i degen.

Låt degen jäsa i ca 30 min på ett varmt ställe. När brödet jäst färdigt dela i två delar och lägg i valfria kärnor, frön etc. Jag hade riven morot och pumpakärnor i den ena halvan och aprikoser och linfrön i den andra. Rulla bullar eller baguetter och låt brödet jäsa igen i ca 30 min täckt under bakduk.

Sätt ugnen på 220 grader och grädda i nedre delen i ca 20-25 minuter. Ta ut brödet och låt det svalna under bakduk ett tag innan du skär upp och njuter av det, mums!

Om du inte äter upp allt dagsfärskt så frys in det så blir det som nybakat när du tar fram och värmer det på nytt.

Gluten Free Bread (approx. 12 buns)
500g gluten free flour
7 dl (2,9 american cup) water
25g fresh yeast
3 tbsp oil
3 tsp salt
a small carrot, grated + 1/2 dl (1/4 cup) pumpkin seeds
1/2 dl (1/4 cup) dried apricots, cut in pieces + 2 tbsp flax seeds

Crumble the yeast into a bowl, add lukewarm (37C/ 99F) water and stir until the yeast has dissolved completely. Then add oil and salt. Add flour and let the machine do the job with kneading it. If you don't have a machine stir the dough vigorously until everything is mixed properly. It should not be any lumps in the dough.

Let the dough rise for about 30 minutes in a warm place. After about 30 minutes is complete, split the dough in two and add in optional grains, seeds etc. I had grated carrot and pumpkin seeds in one half and dried apricots and flax seed in the other. Roll to buns or baguettes and let bread rest again for about 30 minutes covered with a cloth.

Preheat the oven to 220C/428F and bake in the lower part of the oven for about 20-25 minutes. Take out the bread and let it sit under a cloth for a while before cutting up and enjoying it, yum!

If you don't eat all the bread freshly baked then put it in the freezer and it will be fresh when you reheat it.
