Risoni soppa - Risoni Soup

Ni som känner mig vet att jag älskar att experimentera med smaker hej vilt i köket. :) Indien möter Italien i den här härliga smakrika rätten! Annars flyter allt på här hemma. Första arbetsveckan avklarad efter semester och allt känns som vanligt igen. Jag tycker om semester men jag gillar även fasta rutiner och så har jag inte heller ont av att arbeta till skillnad från många andra. Märker ni att jag har bytt header på bloggen? Alltid svårt att veta hur en ny ska se ut. Är jättetacksam om ni säger vad ni tycker om den. :)

Those of you who know me knows that I love to experiment in my kitchen. India meets Italy in this delicious and tasty dish! Otherwise my first working week after the holidays is finished and everything is back to normal again. I like our 4 weeks paid vacation that everyone in Sweden gets during the summer... but I also like routines and have no problems of  working either. I have changed the header for the blog as well. Feel free to say what you think about it. :)

Indisk risonisoppa (2-3 portioner)
2 msk olja
0,5 tsk senapsfrön
0,5 tsk hela spiskummin
1 krm hing (asafoetida) kan uteslutas om man inte har
1 liten gul lök, hackad
2-3 dl tomater, hackade i små bitar
1 msk malen koriander
0,5 tsk gurkmeja
0,5 tsk chilipulver eller färsk finhackad grön chili (mängd efter tycke och smak, var dock försiktig så det inte blir för starkt!)
0,5 tsk malda spiskummin
salt, smaka av med
2-3 dl vatten
0,5 msk gur (På engelska jaggery, kan ersättas med råsocker.)
1-2 msk färsk koriander, finhackad
3 dl färdigkokt risoni

Hetta upp oljan i en djup panna och lägg i senapsfrön, när de börjar "bubbla" lägg i hela spiskummin och kort därefter hing (om du har). Lägg i löken och låt bryna en liten stund. Tillsätt därefter tomathacket och låt puttra 3-4 minuter tills tomaterna har blivit mjuka, nästan såsiga. Lägg därefter i malen koriander, gurkmeja, chilipulver/finhackad grön chili, malda spiskummin och salt.

Rör om och låt kryddornas smak utvecklas i grytan i ca 3-4 minuter. Värmen gör att smaken och doften från kryddorna blir fantastisk! Häll i vatten och lägg i gur/jaggery/råsocker.

Låt allt koka ihop i 4-5 minuter. Lägg i lite färsk koriander om du önskar (spara lite till garneringen) och den kokta risonin. Servera omedelbart och garnera gärna med färsk koriander. Buon appetito!

Indian risoni soup (2-3 servings)
2 tbsp oil
0.5 tsp mustard seeds
0.5 tsp whole cumin
1 pinch of hing (asafoetida) can be omitted if you don't have
1 small yellow onion, chopped
2-3 dl tomatoes, chopped into small pieces (1 american cup is about 2,4 dl)
1 tbsp ground coriander
0.5 tsp turmeric
0.5 tsp chili powder or fresh chopped green chilli (Amount according to taste, however, be careful so it doesn't get too strong!)
0.5 tsp ground cumin
salt, season with
2-3 dl water (1 american cup is about 2,4 dl)
0,5 tbsp gur (Jaggery, can be replaced with raw sugar.)
1-2 tbsp fresh coriander, finely chopped
3 dl cooked risoni (1 american cup is about 2,4 dl)

Heat the oil in a deep pan and add the mustard seeds, when they start to "bubble" add to the whole cumin and shortly thereafter hing/asafoetida (optional). Add the onions and fry it golden. Then add the chopped tomatoes and let it simmer 3-4 minutes until the tomatoes have become soft, almost sauce like. Then add the ground coriander, turmeric, chili powder/finely chopped green chillies, ground cumin and salt.

Stir and let the spices develop the flavor in the pan for about 3-4 minutes. The heat makes them tasty and the smell of the spices are amazing! Pour in water and add gur/jaggery/raw sugar.

Let everything simmer for 4-5 minutes. Add some fresh cilantro if you like (save some for garnish) and the cooked risonin. Serve immediately and garnish with fresh coriander. Buon appetito!
